image1Growing up in my family, my father did all the cooking. He was a major foodie so it worked for everyone. His favorite dishes were always Mexican. That's probably why I feel such a strong connection to Mexico. A good home-cooked meal to me is always Mexican. Coach Mau has been working with my dad and encouraging him to eat more fish, and being the foodie that he is, he came up with an amazing dish that I'm excited to share with you today! Colorful Mahi Mahi Bowl 1 lb Mahi Mahi 1 Mango 1/2 cup Cilantro, chopped 1 can Black Beans 1/4 cup Pineapple Juice 1 Avocado, diced 1 Red Bell Pepper, diced 1/2 cup Red Onion, diced 3-4 cups Spinach 1 Lime Red Pepper Flakes Chicken Broth 2 TBS Garlic, minced 1 TBS Soy Sauce Quinoa Salt and Pepper to taste Combine the following and set aside: Mango Avocado Red Pepper Flakes Cilantro ½ can of the Black Beans Red Onion Pineapple Juice 1/2 Lime, squeezed 1/2 tsp of minced Garlic Mahi Mahi

  • For marinade, blend the other half of the squeezed lime juice, minced garlic and soy sauce in a bowl
  • Salt and pepper the fish to taste
  • Brush with marinade put into hot frying pan, with light olive oil
  • Sear both sides of fish then use marinade to brush on.
  • Reduce heat, takes about 5 minutes to cook
Quinoa
  • Cook in chicken broth
  • Add chopped garlic
  • Diced bell peppers
  • Toss in remaining ½ can of Black Beans after quinoa is cooked
  • Saute spinach in garlic, and olive oil
Assembling Your Bowl: Layer 1 - Quinoa Layer 2 - Garlic Spinach Layer 3 - Mahi Mahi Layer 4 - Mango Salsa Garnish - Fresh Cilantro
